Taco Soup

Ingredients

  • One package Taco ‘Soup’reme mix from The Gourmet Cupboard
  • 1 lb ground meat
  • 2 (15oz) cans of corn
  • 1 (8 oz) tomato sauce (I used one can of tomato paste)
  • I (10 oz) can of Rotel (I omited, non on hand)
  • Water

*I varied a little from the recipe because of preference. I also added dried onions because I did not have Rotel

Empty beans in a colander and rinse well. Place in large pot and top with water (2-3 inches. Turn on medium and allow the beans to being cooking. For roughly 50 minutes. Directions include microwave method.

Cook ground meat and add to beans. Add remaining ingredients including spice packet. Top with water and simmer for 1 1/2 to 2 hours. Until beans are tender and you have the desired thickness. Add water to make soupier, continue cooking to make thicker.

Garnish as you please!

Cheese, sour cream, cilantro, lime juice, pico de’gallo, guacamole
